Bündnerfleisch or raw ham with cream of mascarpone
A delicious party snack or choice starter
(for 4 portions)
100 g finely sliced genuine Bündnerfleisch or raw ham
100 g cream of mascarpone
100 g cream cheese
1 - 2 tablespoons olive oil
Fresh herbs and various kinds of pepper or seasoning (optional)
A few drops of lemon juice
Freshly ground pepper
Fresh baguette or a white loaf (optional)
Rocket lettuce and olives as a side dish
(Preparation time: approx. 30 minutes)
- In a mixer, thoroughly purée the mascarpone with the cream cheese, the olive oil, lemon juice and the seasoning. Season to taste with freshly chopped parsley or chives. Spread the slices of Bündnerfleisch with a little of the cheese mixture and roll out carefully and serve decoratively on a plate.
- This speciality makes an excellent starter if the fresh bread is spread with the cream of mascarpone, topped with a slice of Bündnerfleisch or raw ham and served as a roll or canapé accompanied by rocket lettuce.
- Wash the fresh rocket lettuce and cut into thin strips.
Balsamic vinegar dressing
- Mix half a finely chopped onion and 1 crushed clove of garlic with yellow or orange pepper and lettuce with a little mustard and a soup spoon each of olive oil and balsamic vinegar. Sprinkle the rocket lettuce with the dressing.
Serve this snack shortly before the party.
