Bündnerfleisch with yoghurt filling

A culinary delight for your cocktail parties or as a starter


(for 4 people)

100 - 150 g finely sliced Bündnerfleisch or raw ham
White bread or baguettes

Ingredients for the filling
180 - 200 g yoghurt
180 - 200 g soured cream
3 - 4 freshly crushed cloves of garlic
3 - 4 finely diced cocktail gherkins
3 - 4 tablespoons fresh herbs such as chives, parsley, basil or oregano
1 - 2 tablespoons lemon juice
Dried red peppers to taste
Various coarsely ground types of pepper
Seasoning at your taste


(Preparation time: 1½ hours, recipe takes approx. 10 minutes)
  • Mix the seasoning, herbs and other ingredients for the filling together with the yoghurt and sour cream and leave to stand in a refrigerator for approx. 1 hour. Coat the Grisons meat speciality with as much filling as you require and roll out. Tie up with a strip of chive to taste and arrange decoratively on a plate.

Variation: Spread the slices of bread with the mixture and cover with slices of Bündnerfleisch or raw ham. Serve immediately.
